A very large chicken kebab
The church I attend holds an International feast every summer. This year, I am going to cook 6kg of chicken kebab to take.
This is the same, go to kebab recipe. I cannot fault it but I do need to branch out next time. Tandoori chicken maybe....
I scale the recipe up to make just over 3 portions and set the chicken to marinade overnight on the Friday before. Saturday is cook day and Sunday is when people get to eat.
As a note, Angus & Oink now make a rub for this and did it with Kelly who created the recipe. If you didn't want to make the marinade yourself.
We can't just take the chicken, so on the Saturday my wife sets to work on making a number of flatbreads and our own garlic mayonnaise to go with them. The mayo has got garlic flavour zinging from it. We should make some more, I'm remembering it as I type this and my mouth is watering.
I get the chicken on the bbq, unfortunately I've not weighted it correctly and it doesn't rotate, however, as there is no direct heat it doesn't matter, still takes around 3-4 hours to cook and it's still juicy. I can't help but sample a few crispy bits!
Taken to church the following day, it's reheated on site and served for anyone to just take what they are wanting, wrap in the flat bread and enjoy.
